No Bake Coconut Cake

This is my favorite kind of summertime recipe. Cool, easy and no bake. It's also easy to adapt to a sugar free diet by substituting a sugar free cake and pudding and using skim milk instead of whole. The cook time listed is actually the time it takes to chill.

SERVES 8 -10 (change servings and units)

Directions

    Crumble angle food cake in large dish.

    Mix instant pudding& milk according to the instructions on the package.

    Add coconut.
  4. 4
    Pour over cake and mix thoroughly.

    Top with cool whip, chill.

Excellent dessert. I used ff and sugar free pudding to make low cal couldn't tell the difference. very simple and quick recipe it you need something in a hurry. I recomend this recipe to anyone. Very good.

    Mmmmmmmmm Nummmy!!!! Very good dessert and I could have some!!!Thanks for sharing this adjustable dessert Mystergirl! I used low cal instant vanilla pudding and 2% milk, with unsweetened coconut. We don't care for cool whip (personal preferance), so I cut up a banana and folded it in. Almost like banana coconut cream!!! I think this would be wonderfull with any flavour instant pudding and will certainly make it again. Thanks for sharing.
