No-Bake Chocolate Oatmeal Cookies

These simply melt in you mouth, and are so very easy to make!

24 cookies (change servings and units)

Ingredients

Directions

    Measure out nuts and oatmeal in a large mixing bowl.
  2. 2
    Combine sugar, cocoa, milk and butter in a saucepan and gently bring to a boil.
  3. 3
    Boil mixture for about 1 minute.
  4. 4
    Remove from heat and add peanut butter and vanilla and mix to combine.
  5. 5
    Pour hot mixture over nuts and oatmeal and mix well.
  6. 6
    Drop onto waxed or parchment paper.
  7. 7
    I made about 2 inch cookies, but feel free to make them smaller.
  8. 8
    Press together to flatten a bit, and to prevent them from falling apart.
  9. 9
    Cookies will harden slightly in about 5 to 10 minutes, and they'll be ready to enjoy!

Fabulous! I substituted Splenda for the sugar and low fat spread for the butter and they turned out great! I also halved the recipe since there are only two of us...and one of us (namely me) has been known to eat cookies until they are gone! I will absolutely make this recipe again and again.

    My bunch has loved these for years also. I have seen recipes with 3 to 6 Tbsp. of cocoa. Depends on how chocolaty you like them. If you like coconut, try adding 1/2 cup flaked coconut to 2 1/2cups of oatmeal(fast cooking)& no nuts. They really are great! Just don't try this recipe in damp weather cause just like divinity it will not set(been there/done that). These are a big sellers in bake sales.

    These are a staple treat and go very fast in my house. I use 3 cups of oats, 2/3 cup of crunchy PB, margarine as a substitute for butter, 3 tbsps. Hintz Dutch Processed cocoa powder. I liked the idea of adding walnuts(don't get pecans here)! Thanks for that, Becky!
