These are wonderful, quick cookies. It is one of the first things I learned to 'cook'. You can add more or less oats (3 cups work best for me). I have found that the weather makes a difference on the consistency. It is very important not to boil them for longer than a minute.

24 cookies (change servings and units)

Ingredients

Directions

  1. 1
Add the first four ingredients into a 4-quart sauce pan.
  2. 2
Bring to a rolling boil and hold for 1 minute.
  3. 3
    Remove from heat.
  4. 4
Stir in the next 3 ingredients and drop by tablespoons onto wax paper.
  5. 5
    Let cool until set.

I altered this recipe with several goals in mind: to make it vegan, to add nutrition and fiber, and cut back on sugar. I used Earth Balance margarine, hemp milk, almond butter, some ground flax, chopped walnuts, and just 1 1/2 cups sugar. I think the sugar can still be reduced by 1/4 cup because they were more than sweet enough with 1 1/2 cups. They set up well and are delicious. A nice option for a treat here in the Phoenix summer when heating the oven isn't an option.

These taste GREAT and are SO easy to make! I had my 3 year old help and I didn't mind cause there isn't really any way you can mess these up They made just over 24 cookies and were ready to eat about 5-10 minutes after making. I will definitely make these again!

I love this cookie recipe! It has been one of my favorites for when I have a sweet tooth and need something quick! You can also add a little bit of coconut (1/4 cup) to it if you want, but they are delicious without!

I love these cookies! I had a recipe without the peanut butter, but adding the peanut butter makes this recipe even more delightful and more like the cookies I remember from growing up. They were gone very quickly in my house! Next time I'll double the recipe Thank you!
