No-Bake Chocolate Oatmeal Cookies

These are wonderful, quick cookies. It is one of the first things I learned to 'cook'. You can add more or less oats (3 cups work best for me). I have found that the weather makes a difference on the consistency. It is very important not to boil them for longer than a minute.

    Add the first four ingredients into a 4-quart sauce pan.
  2. 2
    Bring to a rolling boil and hold for 1 minute.
  3. 3
    Remove from heat.
  4. 4
    Stir in the next 3 ingredients and drop by tablespoons onto wax paper.

    Let cool until set.

My mom has made no-bake cookies when I was little, but I have never actually made them. These cookies are really good for no-bakes, and the recipe was easy to follow. I'm rating this 4 stars because they didn't set up for me, in cookie form. I ended up pouring the whole she-bang right onto my wax paper-lined, rimmed baking sheet, and putting it in the fridge (it looked kinda... umm... not like food, but I was still willing to give it a chance). It was a chilly Colorado afternoon, so I don't think the weather was too much of a factor... I also added 1/4 c. coconut. Anyway, once we cut them, they are REALLY sweet and chocolate-y (which is a good thing!), but I think I still might decrease the sugar a bit (maybe by 1/3 c.) next time around. Also, I will have everything ready too (baking sheet lined with wax paper, ingredients measured out), because once you get going, it's all in the timing! Thanks for posting this.

    I love this cookie recipe! It has been one of my favorites for when I have a sweet tooth and need something quick! You can also add a little bit of coconut (1/4 cup) to it if you want, but they are delicious without!

    I love these cookies! I had a recipe without the peanut butter, but adding the peanut butter makes this recipe even more delightful and more like the cookies I remember from growing up. They were gone very quickly in my house! Next time I'll double the recipe Thank you!
