Easy, healthy and kids love it! Use plum sauce or your favourite sauce to dip them into. Enjoy!

SERVES 4 (change servings and units)

    Preheat oven to 375°F.

    Beat egg white and yogurt in a large bowl. Add chicken and stir to coat.
  3. 3
    In a flat-ish bowl, mix together corn flake crumbs, seasoning salt and pepper.
  4. 4
    Spray cookie sheet with olive oil or cover with parchment paper or nonstick foil.
  5. 5
    Dunk each piece of chicken into crumbs using a fork. Arrange on cookie sheet. Spray tops with olive oil and place in oven for 20 minutes.

Wonderful chicken fingers Nif. They were quick and easy to make. They tasted great...much better than store bought. We dipped ours in Thai Hot Sauce and Tamarind Sauce...because the Plum Sauce was hiding in the fridge, we couldn't find it...but it was there laughing at us. I will definitely make these again...can't wait to try them with the plum sauce. I know that they will be even better. Thanks so much for sharing your recipe.
