Nana's Quick Pudding

This is a recipe my Nana used to always make.I loved it as a kid and still do today. Yummo!!

SERVES 4 (change servings and units)

Ingredients

Directions

    Mix first 4 into a dough and press into a buttered round (about 6 cup capacity will fill to top once cooked)casserole dish.
  2. 2
    Mix margarine and golden syrup with boiling water, pour over dough mixture and cook for 1/2 hour at 180°C or till skewer comes out clean and top is golden.

    Serve with cream or ice cream.

    Yum, very simple and easy.

My doubts went away once I took this pudding out of the oven! Could not believe with the water poured over the batter that it would come out well. I do advise greasing/spraying the bottom generously since it wants to stick. I added 1/2 teaspoon of cinnamon and 1/2 teaspoon of vanilla to add flavor. The whipped cream is a must on top. It had a pudding texture. I baked it at 355 degrees for 30 minutes. Prepared as a participant in the Aus/NZ Swap #34 Event November 2009.

    So quick to whip up and loved by everyone - gorgeous thick sauce at the bottom - best served warm with cream - I used dried cherries due to a lack of currants but I think dried apricots would be also great in it so many thanks to Stardustannie and her Nana.

    Hmm. This was easy to make but after cooking for 1 hour at 350F it still wasn't done. It still had gooey liquidy parts. I don't know if it was my flour so I won't give it a starred rating. I tried the cooked parts with vanilla ice cream and it reminded me of bread pudding. It has a very simple sweet flavor. It probably would be good with cinnamon.

    Just like my mother used to make. Sometimes she used brown sugar in the syrup as another reviewer suggested. Real comfort food. Brought back many memories Another into the 'keeper' file.
