Unable to find sumac, I found some websites that recommend substituting lemon zest. This is what I decided on after loking at many recipes.

1/3 cup (change servings and units)

    Grind the toasted sesame seeds with a mortar and pestle.

    In a bowl, combine all ingredients well.

    Store in a tightly capped jar in the refrigerator.

    This is a relatively low-sodium (salt) seasoning, which was a lrge attraction for me. It also contains my favorite herb thyme. The combination of the thyme and lemon I knew I would like, but the toasted sesame flavor blends in well, too. I've used it so far in stir-fries and pilaf and to both it provides a nice accent.

    Yum! I roasted some potatoes with some of this sprinkled on top, and they tasted wonderful. I like that it doesn't have a lot of salt in it compared to the other ingredients, and I wasn't sure if I would be able to find sumac either. I can't wait to try this with couscous or hummus. Or on top of chicken. Or with green beans . . .
