My Mother's Mississippi Mud Cake

There are many recipes here for this, but my mom's seems to be just a bit different. I had to post for her. I have made this often but I must confess I do not eat it because I don't like coconut (good diet dish — for me at least — to bring to pot luck) — people who will eat coconut always rave about this.

1 13x9 pan (change servings and units)

Ingredients

Icing

Directions

    For Cake: Cream together margarine, sugar and cocoa.
  2. 2
    Add 4 eggs and vanilla; mix well.
  3. 3
    Add flour, coconut, chopped nuts and beat 1 to 2 minutes.

    Bake@ 350 degrees for 30 to 40 minutes.

    While still hot, spread a jar of marshmallow creme over cake.
  6. 6
    For Icing: Mix together all ingredients for icing and spread over cake.

    this is sooo good!! i made this for dessert lastnight and my family just loved it... i love the addition of coconut, it makes the cake part taste almost like german chocolate, yum! Thanx *shelly*!!

    Shelly, your mom's recipe is the same as my husband's grandmother's (and you are right - it is different than the other ones posted on this site). The only difference is that my grandma-in-law's has a teaspoon of baking powder in the cake batter. This is the yummiest cake that looks like you went through a lot more trouble than you really did! Some of the other versions don't have the coconut in it, so I bet you could get away with leaving it out, if you really don't like it. I am thinking I need to go buy a jar of marshmallow cream and make this again.
