My Favorite Spinach Salad

We enjoy having salad for supper. This recipe is a favorite and is quite filling. This is my version of the spinach salad they serve at The Angus Barn, a very popular restaurant in Raleigh, NC. I hope you enjoy it as much as we do!

SERVES 2 -4 (change servings and units)

Ingredients

  • 1 (6 ounce) package baby spinach leaves

  • 5 hard-boiled eggs, chopped
  • 1/2 lb bacon, fried and crumbled
  • 1 medium red onion, thinly sliced

  • 1 (12-16 ounce) jar of your favorite refrigerated poppy seed dressing

Directions

  1. 1
    Place freshly washed spinach on individual plates.
  2. 2
    Sprinkle with chopped hard boiled eggs and crumbled bacon.
  3. 3
    Spread sliced onion on top.
  4. 4
    Drizzle with poppyseed dressing.
  5. 5
    Serves 4 small or 2 meal size.

This recipe is wonderful. I did reduce the recipe by half and served it as a side salad. The amount of boiled eggs and bacon were also reduced, dietary reasons. The dressing was Poppy Seed Dressing Low Sugar. I will make this many times over. Thanks Bev.

    I made this as a side dish for my DD and I tonight with Crispy Salsa Chicken Crispy Salsa Chicken for a fast dinner- I could easily make this as a dinner salad though!! Both were tags in the May 07 Cooking with spirits May tag game - and are keepers!!! I will continue to make this one! Thank you Bev!!

    This is unquestionably the best spinach salad I've ever had! It is key to have a nice sweet poppy seed dressing. This can make a full meal by itself!

    Delicious summer recipe Bev! I did use good seasons dressing instead, and added white rice, perfect for a hot day, thanks!!
