Mushroom Stuffed Flank Steak

Delicious stuffed flank steak with a rich, tangy gravy.

SERVES 6 -8 (change servings and units)

Directions

    Lightly salt and pepper both sides of the flank steak.

    Spread one side with mustard.
  3. 3
    To prepare stuffing, heat vegetable oil in a frypan, add onion and cook for 3 minutes until lightly browned.

    Add mushroom pieces and cook for 5 minutes.
  5. 5
    Stir in parsley, chives, tomato paste, and bread crumbs, then season with salt and pepper and paprika.

    Spread stuffing on mustard side of the flank steak, roll up jelly-roll fashion and tie with thread or string.

    To prepare gravy, saute bacon in a Dutch oven until partially done.

    Add the meat roll and brown on all sides, approximately 10 minutes.

    Add the finely chopped onions and saute for 5 minutes.

    Pour in the beef broth, cover Dutch oven, and simmer for 1 hour.

    Transfer meat to a preheated platter.

    Season pan juices in the Dutch oven with mustard, then salt and pepper to taste; stir in catsup.

    Serve the gravy separately.

What, only 3 reviews? It's so hard to believe with this great recipe sitting before us! You've got to try this and see for yourself how good it is! It makes lots of gravy, so have some extra crusty bread handy!

    Julesong - I have been making this recipe for about 12 years and it is delicious. It is my son's favorite "Sunday Best" meal and I make mashed potatoes to go with the gravy because it is such great gravy. Thanks for posting the recipe to my favorite recipe site!

    This was delicious! I highly recommend the recipe. Modifications I used 1/3 cup Japanese Panko instead of breadcrumbs and only a tsp of oil. Also, substituted chopped green onion and cilantro for the chives and parsley as it's what I had on hand.
