Mushroom Stroganoff on Toast

I love mushrooms and I am a big fan of stroganoff so this sounds like a good combo to me.

SERVES 2 (change servings and units)

Ingredients

Directions

    Put a wok or frying pan over the heat while you thickly slice the mushrooms.
  2. 2
    Tip the butter into the pan and when sizzling add the mushrooms and cook over a high heat, stirring occasionally until the mushrooms are tender and juicy.
  3. 3
    Meanwhile toast and lightly butter the bread and put on 2 plates.
  4. 4
    Stir the mustard and some salt and pepper into the mushrooms with 4 tbsp of the sour cream.
  5. 5
    When lightly mixed, pile the mushrooms and their creamy sauce on the toast.
  6. 6
    Spoon the last of the soured cream on top, sprinkle over the chives and grind over some black pepper.

    I'm a mushroom lover myself, so I had to try this out. It was fantastic, I added in some finally chopped bacon that I cooked on the side and some chopped onions, it turned out great!!! I WILL keep this in my favourites. Thank-you for posting.

    This was pretty good but a little bland for us. I think next time I would use shallots and garlic to add flavor. Thanks for sharing!

    on my own at the moment, so this was a great dinner! I dont like grain bread, (and didnt have any) so just used white. I think it would have been better with a nice slab of Italian loaf though! wonderful combo! nov swap
