Murray's Tuna Casserole

My dad would make this often, serve it warm for dinner, and cold for leftovers the next day. If you like cheesy tuna casserole, you can add 1/2 cup of shredded cheddar cheese to the mayo mixture or sprinkled on top followed with the breadcrumbs. While warm, this is very creamy. When you refrigerate it, the macaroni absorbs the mayo and it becomes flakier. Both ways are delicious! --Bird

    Preheat the oven to 350°F Place macaroni in a large pot of boiling water and cook according to package directions.

    Meanwhile, In a large bowl, mix tuna, onion, celery, optional red pepper, mayo, cream cheese, salt, and pepper. (and cheddar cheese if incorporating, or sprinkle it on top but before the breadcrumbs if you want it as a topping).

    When macaroni is cooked, drain well, then add the hot pasta to the mayo mixture and stir well.
  4. 4
    Pour into an 8x8 casserole dish and lightly sprinkle top with (cheddar cheese first, then) bread crumbs. Bake 25-30 minutes till heated through.

This was tasty but we found it to be a little dry. My casserole didn't end up looking like the photos however, so I don't know if it was that I used rotini? We skipped the red pepper and I think I would saute the celery and onion a bit next time. I will have to try this again! Made for PRMR. Thanks 2Bleu!

    Great comfort food all around. And..on a cool late summer night, this was perfect. Followed your ingredients exactly except for the redpepper. I did opt to use the shredded cheddar on top with the breadcrumbs. This is a rich and creamy meal that doesn't require a side other than a dinner roll or some garlic bread. Made for TYM Tag.~

    I am on record as having a life-long fondness for the tuna casserole genre & Murray is my new hero. I made it exactly as written, had only 1-2 oz cheddar cheese I put in the tuna mix & seasoned my plain breadcrumbs w/a mix of seasoning salt, black pepper, paprika, parsley + chives. It was creamy w/o being overly so & taste perfect. I esp like the texture & flavor from the use of raw onion, celery & bell pepper. I served it w/the 1st watermelon of the season + coleslaw for a down-home comfort meal at its best. Thx for sharing this recipe w/us.

    A very tasty tuna casserole, seasoned to perfection and with wonderful crunch from the celery and red bell pepper. Sure to be a hit with my MIL.
