Munchies (Lentils)

    In 2-3 quart saucepan bring water and lentils to boil. Cover, remove from heat and let stand 15 minutes.

    Drain Spread out on paper towels to dry.
  3. 3
    Preheat oven 425°F.
  4. 4
    Line baking pan with sides with foil.
  5. 5
    Spray with pan spray.
  6. 6
    Toss lentils with oil, spread out on pan in single layer.
  7. 7
    Bake in oven 10-15 minutes.

    Watch carefully, stirring often, til crisp.
  9. 9
    Combine salt and seasonings sprinkle over lentils and toss.

    Cool.

    Store in air tight container.

I love these. Some of us are allergic to nuts and seeds, we cannot eat processed foods, too many sunflower oils. This helps. I also took some of the other reviewers' advise and only sprayed oil. Thank you.

    Nice snack. Better for you than some! I under cooked these a bit and then turned the oven off, leaving them in for another 10 minutes or so. This allowed them to absorb the remaining heat (leave the kitchen cooler over summer) and let them finish without burning. They had a light 'sandy' type of texture yet each lentil held together. Similar texture to 'sandies' cookies- NOT taste just texture. Would make these again!

    Great! I never would have thought of this. Thank you very much. I was short on time so I had to leave the lentils to drain on the paper towels all day because I had to go to work. They don't need all that oil. Just spray them with a light coating of your favorite 'spray-type' oil. That is enough! I added some chili powder to mine, too. Delicious.

    These are so fun! Little delectable healthy crunchy snacks- great! I'm not a big chip or cracker eater, but I do sometimes crave some "munchies" (if you will ) and these hit the spot! Mine took much longer to cook than prescribed (like 35-45 minutes), but turned out great. I halved the recipe, and used half the oil called for as suggested by stimied, but they are still rather oily- next time I would use even less. I also used olive oil, like stimied. These are great snack food! I imagine they would be well-recieved even by non-healthy-minded people, so long as you don't tell them what they are! I'm looking forward to trying different spice combos- as it is its a good mimic of common flavors found on packaged snack foods. Thanks for posting! I will make again!
