My Mums famous recipe!

SERVES 20 , 20 'pancakes' (change servings and units)

Ingredients

  • 2 cups flour
  • 4 teaspoons baking powder
  • 3 eggs
  • 3 tablespoons sugar
  • 1 pinch salt
  • 2 tablespoons oil (or melted butter)
  • 1 1/2-2 cups milk (to mix to a smooth consistency)

Directions

  1. 1
    Mix dry ingredients.
  2. 2
    Add beaten eggs and butter or oil.
  3. 3
    Add the milk.
  4. 4
    Put on spoonfuls onto greased hot griddle or frying pan.
  5. 5
    Turn when'bubbles' appear.
  6. 6
    Remove from pan and place on wire racks.

Wonderful recipe Evie*! I made these for a light dinner this evening. I added mashed banana, a bit of vanilla extract and instead of white sugar I used brown sugar & 3/4 c egg beaters in place of the eggs in the pancake batter. I also added some pecan pieces and made a homemade warm syrup to top with. Thank you for sharing!

    These made a very nice afternoon snack, I got 18 pancakes (though I thought of them more as oversized pikelets). DM and DS had theirs with diabetic strawberry jam and a dollop of cream while DH and myself had a squeeze of lemon juice DH with a sprinkle of sugar. Thank you Evie and yes they will be made again. This was made for the April Swap#3 game.

    Top these bad boys with Lyle's Golden Syrup or Vermont Grade "A" maple syrup. Mmmmm.......

    We really enjoyed these little, silver dollar sized pancakes. They were very easy to fix and looked lovely. Very good - I'd make these again.
