Wonderful recipe Evie*! I made these for a light dinner this evening. I added mashed banana, a bit of vanilla extract and instead of white sugar I used brown sugar & 3/4 c egg beaters in place of the eggs in the pancake batter. I also added some pecan pieces and made a homemade warm syrup to top with. Thank you for sharing!

These made a very nice afternoon snack, I got 18 pancakes (though I thought of them more as oversized pikelets). DM and DS had theirs with diabetic strawberry jam and a dollop of cream while DH and myself had a squeeze of lemon juice DH with a sprinkle of sugar. Thank you Evie and yes they will be made again. This was made for the April Swap#3 game.

We really enjoyed these little, silver dollar sized pancakes. They were very easy to fix and looked lovely. Very good - I'd make these again.
