Mujadrah - Lentils and Rice

This is my family's take on a wonderful comfort food.

SERVES 8 (change servings and units)

Ingredients

Directions

    Sauté lentils briefly.
  2. 2
    Cover with 3 cups water/stock.
  3. 3
    Bring to a boil then reduce to a simmer for 10-15 minutes while sautéing onions till transparent or a little brown.

    Add rice to onions and sauté for a moment.
  5. 5
    Transfer onions and rice to lentils and add water to cover.
  6. 6
    Add lemon juice, spices to taste, stir.
  7. 7
    Bring to simmer, cover, let cook approximately 40--45 minutes (will take less time if using white rice) stirring occasionally.

    Add more lemon juice, spices if desired.

This was delicious. I did not have brown rice so I used normal parboiled rice instead, it came out great. Thanks a lot!

    Loved this recipe. I'ts greate with baked chicken. I used Swanson's vegetable broth for liquid and When I sauteed the onions (the sweet variety) I also added sliced carrots and chopped green bell peppers. It turned out great. My 1.5 year old daughter loves it. Very easy to make.

    I enjoyed this dish growing up. Thanks for including it with brown rice, I have been making it without a recipe for about a year now and this one is delicious!! I prefer going a little heavier on the lentils and using 4 cups of water because I stir it lot (water evaporates).
