    Cupcakes: Preheat oven to 350 F and line muffin pan with cupcake liners.

    Beat together lime juice, zest, soy milk, oil, tequila, vanilla and sugar.

    Combine the flour, baking soda, baking powder, and salt. Combine into the wet ingredients and mix until smotth.

    Fill liners about 3/4 fill. I use an ice-cream scoop. Baek 20-22 minutes or until toothpick inserted in center comes out clean.

    Transfer cupcakes to a cooling ratck and cook completely before frosting.

    Icing: Blend margarine until soft and fluffy; stir in soy milk, lime juice, tequila and food coloring. Use only the tiniest bit of food coloring.

    Sift in 2 cups confectioners sugar and blend until smooth and creamy. Add additional confectioner sugar if the icing appears too liquidy. Refrigerate until ready to use.

    Spread icing on the cupckaes spreading all the way to the edges.

    Roll the outer edge of the cupcakes in the sugar crystals.

I was scared of these. I didn't think they were very good when I first made them. But after they sat over night, I think the flavor improved. I couldn't really taste the tequila, but the lime flavor was yummy. I brought them to a party and all the omnivores gobbled them up and even licked the crumbs off the liners. Their favorite part was the salt on the icing. I decorated mine with salt and sugar in the raw on the edges, with a twist of lime in the middle.

    These are SO good! The texture was perfect. The flavour was great. I was scared at first, but the finished product far surpassed my expectations.

    Not your everyday cupcake, but great for the margarita lover in your life! The batter itself is SOOOO delicious, I actually liked it better then the cake, my cakes turned out a little "gummy", I don't know if it was caused by over stirring, or the tequila. Good flavor, and I too fiddled a lot with the icing, I think I will stick with my favorite Vegan Fluffy Buttercream with a little lime next time.

    These are DELICIOUS. I made them for my college students and they loved them! This made 15 cupcakes, and I added 3 1/2 cups total of powdered sugar and some flour to get the frosting thick enough.
