Mozzarella With Mediterranean Salsa

Slices of tomato & mozzarella finished with salsa.

SERVES 4 (change servings and units)

Directions

    Arrange the mozzarella and tomato slices onto individual serving plates.

    Blanch and refresh the zucchini and eggplant, then combine with the black olives.
  3. 3
    Pile spoonfuls into the centre of each plate, mix together the dressing and pesto then drizzle over the salad. Season with plenty of black pepper.

    Serve immediately.
