Most Excellent Mexican Rice

This goes nicely with my Chicken Breasts Con Rajas or any south of the border meal.

SERVES 8 (change servings and units)

    In a large skillet over medium heat cook the onion in the oil until tender, but not browned, about 3 - 5 minutes.
  2. 2
    Add the garlic and rice and cook another 3 - 5 minutes, stirring often, until rice is pale yellow.
  3. 3
    Add the tomatoes, consomme, cumin and salt.
  4. 4
    Bring the mixture to a boil over high heat.
  5. 5
    Cover and simmer over very low heat until the liquid is absorbed and the rice is tender, approximately 20 minutes.

We had to change this from 4 stars to 5 stars as we've made it several times and it seems to be our go-to recipe. I do make a minor change of adding 1 can of tomato paste and about 1/2 cup more broth. But this recipe is both versatile and delicious! Original review 8/14/09 - Delicious and simple to prepare! I used 1C of fresh tomatoes and 3oz of tomato paste, otherwise, made to specs. Wonderful flavor of the cumin and beef broth make this uniquely tasty. Definitely a keeper recipe! Thanks for sharing. ~Buddha

    Great flavor and so easy to make. I'll never buy the packaged stuff agian. Made just as directed for ZWT5, a fellow epicurean queen.

    Delicious rice! I usually use chicken broth in my Mexican Rice but using beef broth was a nice change. DbF could not get enough of this one. Made for ZWT 5 by a fellow Epicurean Queen.

    We loved this rice! DH, myself and our super picky 4 year old DD (who usually hates everything) LOVED this dish so much that we all went back for seconds and kept saying how good it was. I used canned diced tomatoes, not fresh, since that's what I had on hand. I will definitely make this again since it was such a hit. I can't wait to eat the leftovers for lunch tomorrow Made and reviewed for ZWT-5.
