Posting for Fairy Nuff to have a look at. These are a very popular biscuit (cookie) in Australia, and this tastes pretty much like the bought variety.

24 biscuits (cookies) (change servings and units)

    Cream the butter and sugar until light and fluffy, add the egg and vanilla and beat well.
  2. 2
    Add sifted dry ingredients and coconut, mix well.
  3. 3
    Roll teaspoonfuls of mixture into balls, shape into ovals and place on lightly greased oven trays, rough up the surface with the back of a fork.

    Bake in a moderate oven 10 to 15 minutes or until golden brown.

    Remove from the oven and cool on a wire rack.

    Put a teaspoon of jam in the centre of half the bisuits (cookies) and a teaspoon of prepared filling in centre of other half of biscuits (cookies).

    Press the two halves gently together.

    Cream butter and sifted icing sugar until light and fluffy, add the vanilla, add the milk gradually, beating well.

These biccies taste far better than the bought variety. I am pleased to have found a recipe as I used to make them years ago and lost the recipe - this is the exact same recipe I lost. BEAUTIFUL BICCIES!!!

    Fantastic, tasted like butter cookies, delicious chewy crunch. I used dessicated coconut. I formed the cookie too big, and didn't change shape when baked. I made 29 cookies (14 sanwiched + 1 extra) i halved the frosting and turned out just enough for the 14 pairs.UPDATE: use a smaller scoop this time and flatten with a glass dipped in flour. Made 15 pairs of cookies

    This is a great recipe, just like the original. In fact my sister said they tasted exactly like the original, but better!

    Jan - these ARE Monte Carlos!!! They taste like them and they even look like them - I was so happy with how they turned out.I put them on a plate to take a photo and the kids all asked for a Monte (without realising that I'd made them!!)...you can't get more authentic than that!! I made the recipe exactly as written but I left 12 plain and dunked them in melted chocolate...Chocolate Montes. An excellent recipe that I will use a lot as I'm always after something to make for the kids school snacks - as well as a yummy treat with a cuppa!
