Yum! We were given a bag of zucchini. This is a lovely way to use it. I did reduce the oil by half and it still worked fine. Good stuff. And it is great for breakfast next day, too.

These were very tasty, much better than I had expected. I omitted the onion since I don't eat onions and I increased the garlic to 5 cloves. I did think they were a little too greasy, and will reduce the amount of oil I use next time I make these. But overall, I really liked them.
