Mom's Swedish Meatballs

This is an easy recipe with ingredients you probly have at home. I love it!

SERVES 4 (change servings and units)

Ingredients

  • 1 lb ground beef or venison
  • 1 egg
  • 2 cups soft breadcrumbs
  • salt
  • 1/4 cup onion, minced
  • 1/4 cup olive oil

  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1/4-1/2 cup water
  • 1 teaspoon parsley

Directions

  1. 1
    preheat oven to 375.
  2. 2
    mix thoroughly: meat, eggs, bread crumbs, salt (to taste), and onion.
  3. 3
    Form into 1 to 2 inch balls.
  4. 4
    Brown in a frying pan with olive oil.
  5. 5
    place in baking dish or crockpot.
  6. 6
    mix soup, water, and parsley. Pour over meatballs.
  7. 7
    bake until cooked thoroughly (about 15 min in oven).

    serve over rice or egg noodles.

Made this with ground chicken and whole wheat bread crumbs. I made my own mushroom soup with a base of chicken broth. They were delicious. I can't wait to have the leftovers for lunch tomorrow. We enjoyed them over Quinoa With Spices.
