Mom's Famous Potatoes

This is out of a local TV Cookbook by KCTS Cooks (favorite recipes). Sent in by a Bellevue, Washington viewer. She said it's always requested for special family gatherings, and can be prepared ahead of time.

SERVES 8 (change servings and units)

Ingredients

Directions

    Boil potatoes in salted water until not quite done.
  2. 2
    Drain, cool and scrape off peels.
  3. 3
    Grate potatoes into a large bowl, using the big holes of the grater.
  4. 4
    Peel onion, cut in half and slice very thin.
  5. 5
    Mix onions with potatoes.
  6. 6
    Add salt, pepper and nutmeg.
  7. 7
    Grate cheese and add to potatoes saving about 1 cup for top.

    Add sour cream and mix well.
  9. 9
    Taste and adjust seasonings.
  10. 10
    Pile into a 9 X 13-inch baking dish and top with remaining cup of cheese.

    Sprinkle with paprika.

    Bake for approximately 1 hour at 350 degrees.

    If prepared ahead and refrigerated, allow more baking time.

I added a packet of frozen spinach - drained - which I mixed in with the potatoes and onions in step 5. Just seemed easier than heating them separately later, but - for me - in fact they added to what was already a very tasty dish. Loved the nutmeg and paprika. We felt that they added that extra oomph to the overall flavour. I used light sour cream. A seriously yummy creamy and flavoursome dish I'll happily make again. Made for 1-2-3 Hit Wonders.     This was a really good mashed potato bake aside from the normal. I used redskin potatoes as the only deviation from your recipe. Next time I will omit the nutmeg as DH asked what tasted different about them. I"m sure that was what it was. Nothing big though and something I will make again as it was easy to assemble ahead for baking later. Glad I tagged for 123HitWonders~

    This was a delicious potato dish.It really made a change not to use cheddar.I used Emmental in mine,so it had that lovely nutty flavour to it.Next time I may well add a little garlic or garlic salt to it,just for personal taste. Oh,by the way,I didn't bother to scrape the skin from my potato,as when you grate it it tends to come away from the potato,and you're left with it in your hand. A lovely recipe,again,Teresa.Thanks for sharing.Made for 1-2-3-4 Hit Wonders.

    Loved these potatoes!!! I cut the recipe in half and omitted the nutmeg, only like it in sweets, and then used Lawry's seasoned salt. I cheated and bought refrigerated shredded potatoes, which really made this a quick side dish!!! Thanks for sharing Teresa. Made for 123 tag.
