Mom's Chocolate Cupcakes

This recipe was given to my mom by a next door neighbor many years ago. It makes a wonderful dark chocolate cupcake, or double the recipe for a sheet or layer cake. It has become a family favorite and is always requested at birthdays.

SERVES 16 (change servings and units)

Ingredients

Directions

    Mix all ingredients together until moist and well blended.
  2. 2
    Put in cupcake cups and bake for 20-25 minutes at 350 degrees F.
  3. 3
    Frost with your favorite icing.
  4. 4
    To make a layer cake, double the recipes and put in 2 round cake pans.
  5. 5
    Increase baking time to about 35 minutes or until a toothpick inserted in the center comes out clean.

These were not quite what I expected after all of the remarkable reviews. I followed the recipe exactly, yet my cupcakes were not fantastic. They should have a stronger chocolate flavor, which may just be a matter of the brand that I use. They didn't rise as much as I expected. I believe that they used too much vinegar as well. This was an acceptable recipe, but I don't believe I shall make it again.

    This is a delish recipe! I modified it slightly. I added a cup of espresso instead of water and used unsweetened cocoa and a T of powd sugar. Whoever said to fill them full b/c they don't rise should have seen my first batch, because they did rise and were kind of a mess to scrape off the side of the pan. The second batch I filled about 2/3 and they are beautiful! Kittencal's chocolate buttercream is amazing with this!

    Thank you for this excellent and efficient eggless recipe! It perfectly fit the bill for a chocolatey snack for the kids from a bare cupboard. My magician status is safe! I will conjure this again and again.

    My daughter has multiple food allergies, including milk, eggs, and chocolate, but she wanted chocolate cupcakes. What a wonderful find to come across this recipe! I substituted carob for the cocoa, and it even fooled the neighbor children. Everyone loved them! Thank you!
