This is a fabulous Mojito recipe that makes enough for 4 glasses. I usually double or triple the recipe and serve it in a glass pitcher that is garnished with mint leaves. Perfect for Cinco de Mayo! This Mojito can be made with either white or gold rum but don't leave out the bitters. ¡Vivas!

SERVES 4 (change servings and units)

Ingredients

  • 12-15 small fresh mint sprigs, plus 4 more for garnish
  • 1/4 cup sugar, plus
  • 2 tablespoons sugar, sifted (can use superfine sugar)
  • 1/2 cup fresh lime juice, chilled
  • 3/4 cup white rum or golden rum, chilled
  • 8 dashes Angostura bitters
  • 2 cups club soda, chilled
  • crushed ice

Directions

    In a large container or bowl, muddle mint with sugar until the mint is coarsely chopped and the sugar has turned a shade of green.

    Add lime juice, rum and bitters and stir until sugar dissolves.

    Strain into a small pitcher.

    Pour into iced tea or mojito glasses that are filled about 1/3 with crushed ice and top each drink with 1/2 cup of the club soda. Garnish with mint sprigs and serve.

This was my first time having a mojito, I'm more of a girly frou frou type drinker, this was lovely for something different, tart, refreshing & using up some fresh mint from my garden, great stuff. Thanks!

    Wonderfully refreshing! I love Mojitos and have tried many recipes. I have to say, I've never tried a Mojito I didn't like! : ) I started this recipe with a Simple Syrup, which I already had sitting in my refrigerator, eliminating having to dissolve the sugar. I muddled the mint in the Simple Syrup, adding the freshly squeezed lime juice and rum, staining into the pitcher. This is a delicious recipe which I am sure I will use often.     Your "measurements" are all off. It's actually enough for one drink. lol OMG!!! This is so good. I had mint that was a little aged, but I really wanted to try this. I muddled and muddled, but not sure this older stuff was wanting to be muddled much, but it's so refreshing and delicious. I can't wait until weekend, with more FRESH mint!!! I'm in love.

    Words are not adequate to describe how much I enjoyed this drink. With the help of this recipe, I believe I managed to make an even better mojito than what I'd get at a bar. If you've never had a mojito, you really need to try one, and I recommend using this recipe. Thanks!
