This is the perfect mojito for me. Deceptively smooth. Sometimes I'll cut the spent lime shells in half and add a couple of pieces to the drink for visual effect.

SERVES 1 (change servings and units)

Ingredients

  • 3 ounces light rum
  • 1 lime
  • 2 tablespoons superfine sugar
  • 3 ounces club soda
  • fresh mint
  • ice cubes
  • 1 strip sugar cane (to garnish)

Directions

  1. 1
Muddle 2-3 sprigs of mint with the sugar in the bottom of a 16 ounce glass.
  2. 2
    Stir in the rum.
  3. 3
Squeeze the lime and add the juice to the glass, straining out any pulp.
  4. 4
Add the club soda and stir gently.
  5. 5
Add ice to fill the glass and stir again.
  6. 6
Garnish with sugar cane and serve.

I had to tweak it a little to suit my tastes but everyone is different. I prefer mine with a little less rum and sugar and more lime. But this is a great base to make it at home instead of paying through the nose at a bar...especially when I've had some terrible ones at bars!

Great recipe! We cut down on the sugar just a bit though, as our first ones were a bit too sweet for us. Made for the Tastebud Tickling Travellers, ZWT4
