Mock Potato/Cauliflower Salad

It was a mistake that turned out delicious.

SERVES 2 -4 , 1 quart (change servings and units)

Ingredients

    Steam Cauliflower approximately 8 minute.

    until tender not soft.
  3. 3
    meanwhile seperate yokes from whites.
  4. 4
    In a medium bowl:.
  5. 5
    Add egg yokes mashed, chopped green pepper.
  6. 6
    celery, onion and rest of the ingredients.
  7. 7
    stir until well blended.

    When the Cauliflower is cooled to handle
  9. 9
    cut into bite size pieces and add to mixture.
  10. 10
    I used 1/2 of the Cauliflower.

    You can use your own discretion as to the amount to add.
