Mocha Brownies With Coffee Frosting

I love this recipe because it is easy to mix up, I usually have everything on hand and they taste woooonderful. The frosting is optional.

SERVES 48 (change servings and units)

Ingredients

Directions

    Preheat oven to 350°F Grease a 13x9 inch pan.
  2. 2
    Melt shortening and butter over low heat or in the microwave.
  3. 3
    Remove from heat and add cocoa, blend well.
  4. 4
    Add sugar and mix well.
  5. 5
    Dissolve instant coffee in hot water and mix into creamed mixture.
  6. 6
    Add eggs one at a time, beat well, by hand, after each addition.

    Stir in vanilla, flour, and salt.

    DO NOT OVER BEAT!

    Bake 25-30 minutes.

    Cool completely before frosting.

    For frosting, cream butter and vanilla.

    Add powdered sugar and mix in well on medium speed.

    Dissolve instant coffee in milk and add to mixture.

    Beat on high until light and fluffy.

Very rich, but delicious. I think I could have halved the frosting, or eliminated it all together. The brownie itself was the perfect consistency and very tasty. I will be making again!

    Wonderful treat! Great brownie and the icing is a must! It all gets just a bit too sweet for us, but I would not omit the icing , but maybe even halve the sugar in dough, instead. I would also add some more bitternes to the dough with more coffe. Awsome!

    I discovered I didn't have any shortening but I really wanted to try these, so I subbed another 1/2 c. of butter. This made an extremely dense, fudgy brownie but the taste was out of this world. I generally am not a fan of brownies and actually made these for dh, but I haven't been able to leave them alone! They will not be made often because they are definitely not WW friendly and I seem to have no willpower where these are concerned, but they are amazing!
