Miso- Great Soup!

Ingredients

• 1 teaspoon instant dashi stock
• 4 cups water
• 4 tablespoons shiro miso
• 1/4 cup dried wakame seaweed
• 1/2 cup soft tofu, small dice
• 2 scallions, sliced

Directions

   Heat up about 1 1/2 cups water to simmer for soaking the wakame.

   Turn off and add dried wakame until soft and ready to add to soup.

   Boil 4 cups water.

   When boiling add 1 tsp instant dashi.

   Let boil for 2 minutes and add scallions and tofu.

   Put 4 Tblsp miso paste into small bowl or glass.

   Add some of the dashi broth to make a "slurry" BEFORE adding to broth.

   Add "slurry" to broth.

   Let boil 1 minute & REMOVE from heat.

    Add soaked wakame to broth and pour mixture into serving bowl.
