From Marie-Josée Taillefer. I haven't try it but I think it's delicious and healty because of the green.

SERVES 4 (change servings and units)

Ingredients

    Boil potatoes in salted water until tender when pierced.
  2. 2
    Drain, return them to the pot, cover and let dry a few minutes.
  3. 3
    In a little saucepan, heat the milk with peas and mint.
  4. 4
    Mash the potatoes then add the mixture of peas and butter, to obtain a creamy consistency. Add salt and pepper if you want. And serve.

I had some fresh mint that I wasnt sure what to do with...so I made this recipe. Very easy to do, and a tasty side dish.

    These are really good! I didn't have any fresh mint so used 1 teaspoon of dried mint. Otherwise, I made the recipe as specified. I served it with barbequed ribs. This is a dish that we will definitely enjoy again.

    I'm trying to watch my fat intake so I cooked the potatoes in fat free chicken broth and used the same to warm up the peas and mint. A little dollop of butter and a shot of milk made them seem rich. I liked the peas and potato combo and the mint was a definite change. Actually, DH was so busy examining the new flavors and additions, he never noticed the lack of fat. Cool trick! Thanks for sharing your recipe.

    Great flavour and idea to serve with grilled lamb chops topped with mint sauce or jelly. All the family enjoyed this as part of a great weeknight dinner.
