Mint Julep Pineapple

Fewer calories than a mint julep and you can drive home afterward (Gourmet Magazine, May 2005)

SERVES 4 (change servings and units)

Ingredients

  • 2 tablespoons bourbon or
  • 1/4 cup finely chopped fresh mint, plus more (to garnish)
  • 1 tablespoon sugar
  • 1 medium pineapple, about 2 Lbs, extra sweet, trimmed, cored, cut crosswise into 1/8 slices

Directions

    Mix ingredients, allow 20 minutes for flavors to develop. Can keep in fridge overnight.
