Minestrone

This is an excellent minestrone. I got the original recipe from the Moosewood Cookbook. The original recipe called for tomato sauce. I only had spaghetti sauce on hand and I think the end result is very good. The original recipe also called for zucchini and/or eggplant which my family doesn't care for so green beans were substituted. I reduced the amount of olive oil to make it lower in fat.

SERVES 6 -8 (change servings and units)

    Heat the olive oil in nonstick Dutch oven.
  2. 2
    Add onion, garlic and salt.
  3. 3
    Saute over medium heat for about 5 minutes.
  4. 4
    Add celery, carrot, green beans and seasonings.
  5. 5
    Cover and cook overy very low heat 10 minutes, stirring occasionally.

    Add bell pepper, water and spaghetti sauce.
  7. 7
    Cover and simmer 15 minutes.
  8. 8
    Add beans and simmer another 5 minutes.

    Bring to a gentle boil.
  10. 10
    Add pasta.

    Stir and cook until pasta is done.

    Serve topped with parsley and parmesan.

    Great Minestrone - we soup lovers enjoyed! The aroma alone worth a five - could hardly wait to get this one to the table. Made as posted - perfect for our tastes as well as looks so inviting in the bowls. Made for a lovely evening meal. Thank you, it's made it to my soup cookbook.

    Total comfort food for a chilly and miserable day! I substituted the chickpeas with white beans and the green beans with chopped cabbage..........everything else was as posted! The smell as this soup was cooking were enticing and we could not wait to dive into to it! We ate this with home-made bread rolls and cheese. Thanks. FT

    Very good soup - smelled wonderful while cooking. I used my homemeade sauce for the spaghetti sauce and zucchini instead of green beans. I didn't think it needed any extra liquid - I thought it was just right as-is! Made for Went to Market April 2008.
