Wow, this was such a great find! I often plan to make fish but run out of time to prep and bake it. This was in my microwave for a total of 5 1/2 minutes (I'm picky about doneness), just enough time for me to chop a salad to go with it. I'm sure I will revisit this over and again, with new spices to fit my mood. I used oregano this time instead of tarragon, as I served it with a couscous dish with Italian flavors. I also used garlic powder instead of fresh (for shame!) because I wanted the garlic flavor to be evenly distributed. The vinegar is a great touch--I definitely recommend it and am sure I will experiment with other vinegars. Thanks for posting!
