Microwave Scalloped Potatoes

SERVES 8 (change servings and units)

Ingredients

  • 3/4 cup milk

  • 1 (10 ounce) can cream of mushroom soup
  • 4 medium potatoes, sliced about 1/8 inch thick
  • 1 cup cheddar cheese, grated
  • 1/2 small onion, chopped

Directions

  1. 1
    Combine milk and soup in a microwave safe 2 quart casserole dish.
  2. 2
    Add in all other ingredients, stirring to coat.
  3. 3
    Cover and microwave on high for 10 minutes.
  4. 4
    Stir and then microwave for another 12 minutes, or until potatoes are tender.

WoW! I used 4 med yukons. I can't believe how good this was. The two of us finished the whole dish!!!! I didn't have just cheddar. I used a litte of everything; mozz, cheddar and a mexican combo. I'd serve this to guests! It would be great to put the finished dish under the broiler for a couple minutes. Thanks for sharing. If we had left overs I'd eat them for breakfast

    These are wonderful. If I want to make my husband happy,I make scalloped potatoes. I was in a rush and found this easy and quick recipe. My processor was already to go and in no time the potatoes were in the microwave. I use Homemade Cream of Style Soup Mix - Substitute instead of the can soup.Thanks for posting. Rita

    Very easy and very good. Great for those 90 degree days when you really don't want to turn the oven on. I didn't have cream of mushroom so I used cream of chicken. Delicious!

    Fantastic potatoes! I really loved this recipe. It was easy to make and a snap to cook. I didn't have onions on hand, so I substituted with dried minced onions. It still came out delicious! Thank you so much for sharing this wonderful recipe!
