Microwave Mashed Potatoes

A quick and easy microwave recipe for mashed potatoes. This is a great way to make mashed potatoes without heating up the kitchen when it is hot outside.

SERVES 4 -6 (change servings and units)

Ingredients

  • 6 medium potatoes, peeled and quartered (about 2 pounds)
  • 1/2-3/4 cup milk
  • 1/4 cup butter
  • salt and pepper

Directions

  1. 1
    Rinse peeled and quartered potatoes.
  2. 2
    Arrange potatoes in medium glass bowl.
  3. 3
    Cover with plastic wrap.
  4. 4
    Cook at HIGH for 9 to 10-1/2 minutes; stir once. You can set your kitchen timer for a reminder to stir. Potatoes should be tender.

    Let stand, covered, for 5 minutes.

    During this 5 minute standing time, combine milk, butter, salt and pepper in a large glass bowl or 8-cup glass pyrex measuring cup.

    Cook milk mixture at MEDIUM for 2 to 3 minutes or until hot.

    Drain potatoes.

    Add potatoes to the hot milk mixture; mash until smooth.

Fab! Very easy and 'mess-free' mash doesn't seem as fluffy as regualar-done-in-a-pan mash, but will see what son and hubby say when the sausages are ready! Thanks for that (have just uploaded a photo too)

    Easiest mashed potatoes I've ever made, and they came out great! No more pots boiling over on the stove, this was easy and tasty!!

    This is a awesome dish to make on a very hot day when you still want some comfort food. My DH was begging me for some homemade Mashed Potatoes but I just didn't feel like heating up the kitchen. He loved these!! They are very easy to make. I will be making these again!! This is a keeper, Thank for posting this foodtvfan!!

    Thank you for sharing this recipe. I am so sick of boil overs, too!! Plus the extra time & space on my stove that it takes up. I only used one large potato, since my husband is the only one who eats them. I used a microwave safe bowl with a vented lid, and microwaved for 4 minutes. I should have done it for 5 minutes since the potatoes weren't quite soft enough to mash easily, but he still liked & ate them! I used about 1/4 cup skim milk & 1 tbsp light butter, and added salt & pepper to taste. I had to add a little more milk for creaminess. What a time-saver! Thanks so much.
