Microwave Lemon Garlic Broccoli

Fast fix up makes broccoli not the same old same old! My teens love this and will only eat broccoli like this or smothered in cheese- this is healthier! I created this recipe after the broccoli served at my fave Chinese place. The variety of ingredients apply to many regional cuisines such as Italian, Asian and SW.

SERVES 8 (change servings and units)

    Microwave broccoli and water in covered bowl on high for 6 minutes or til crisp tender.

    While it is cooking mix the rest of the ingredients together.
  3. 3
    Drain cooked broccoli.
  4. 4
    Pour lemon garlic mixture over broccoli and mix to coat.
  5. 5
    If using fresh garlic cover the dish and let sit for about 2 minutes to allow heat from broccoli to "cook" and remove the raw taste from the garlic.

    If using garlic powder you are ready to serve.

The DH couldn't stop raving about this, so even if I didn't like it (which I did), I'd still have given it 5 stars! All supper he kept saying, "Boy, this is better than just plain ol' broccoli with butter and S&P!!!!" I used butter instead of olive oil, but other than that made as directed. Thanks for a GREAT side!

    This was really very good, I have been dealing with lots of morning sickness and not able to even look at broccoli....but I am starting to feel better and wanted to try eating it again. This is a keeper, thanks! (I did use only half of the olive oil as it seemed to be too much.

    This is a great way to fix broccoli. I used fresh broccoli crowns which were separated into flowerets, rinsed and put in a microwave safe dish. I did not add the water and the garlic was thinly sliced and cooked along with the broccoli. I reduced the oil to 1 tablespoon, lightly sprinkled the dish with salt and used 1/2 teaspoon red pepper flakes. Something I know I will do again.

    A delicious, simple and quick microwave recipe for those all too frequent occasions when you don’t have a lot of time, and want something tastier than steamed vegetables. I used fresh garlic and omitted the pepper flakes (personal preference), and added a small sprinkling of cumin which worked well. Just loved the lemony flavour too. Thanks for a really fabulous recipe, which I know I’ll be making often.
