Mexican Squash and Ground Beef Casserole

A simple combination of yellow squash, ground beef, and Mexican spices. A great way to use up the bounty of summer squash in the garden.

SERVES 6 (change servings and units)

Ingredients

Directions

  1. 1
    In a large skillet over medium heat, cook the ground beef until evenly brown. Drain and set aside.
  2. 2
    Heat the oil in the skillet over medium heat. Mix in the squash, onion and garlic and sauté until tender.
  3. 3
    Add the ground beef and tomatoes (and water if fresh tomatoes are used) into the skillet. Season with chili powder, cumin, paprika, salt, and pepper.
  4. 4
    Turn mixture into an ovenproof casserole dish. Top with cheddar cheese. Bake in 400°F oven for 15 minutes.

Very good! I used hot Italian sausage, doubled the squash, and used rotel in place of the tomatoes. This was my first time using smoked paprika, wow, loved the way it tasted!

    My DH loved this. I used fresh tomatoes and did not add any water. I did not have smoked paprika, so I used regular paprika and added a 1/2 tsp taco seasoning. I served it with Zucchini Salsa and sour cream. Delicious. Thanks for a great recipe that I will make many times

    This was fantastic! I had to sub 1 zucchini for yellow squash as they didn't look all that lovely at the market. I doubled the cheese and used diced tomatoes with green chiles already in them. While the flavor was good right away, I think it really improved upon standing. The casserole firmed up and the flavors blended well. The smoked paprika adds SO much to this dish...please be sure not to sub regular paprika, I think you would be missing something if you did. This is a wonderful casserole, low carb only makes it better!
