Mexican Shepherd's Pie

Recipe #133091 | 45 min | 15 min prep | add private note

By: Terri Newell
Aug 10, 2005

My 6 year old daughter says this is the best thing she's tasted in her whole life ! That's high praise from a normally fussy child, so this recipe is definitely a do-over.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
    Brown and drain ground beef.
  2. 2
Add taco seasoning to taste [we prefer a less spicy mix, so I only use half the envelope].
  3. 3
    Add corn.
  4. 4
Meanwhile, boil potatoes until tender, then mash.
  5. 5
If you like, you can add butter and milk.
  6. 6
Spread about one third of the potatoes in a round 2 quart casserole dish.
  7. 7
Top with the ground beef mixture, then the cheese. Finish with the remaining potatoes.
  8. 8
To use right away, bake at 350 about 30 minutes.
  9. 9
To freeze, cover and freeze until solid. Lift out of casserole dish and wrap in foil. Place in zipper bag, label with name and date. Use within 3 months.
  10. 10
To reheat, unwrap and place in original dish, defrost completely. Bake at 375 for 40-45 minutes.

This was delicious! I added some picante sauce to the meat while it was absorbing the taco seasoning, and also added some peas. When I was placing it all in the dish I added two cut up peices of bread just to add a little more texture to it. It made a really nice family meal

Both my husband and I liked this dish, but my kids did not. I may try again with some variations to see if my two boys will eat it and I will repost if I am successful.

Excellent recipe. I doubled the amount of meat and spread cheese over the top during the last 10 minutes of cooking. I also more than doubled the amount of taco seasoning and added 2Tbsp each cumin and chili powder.

Simple and delicious. I added half of an onion to the meat and mashed the potatoes with milk. I wouldn't try to impress any guests with this or anything, but it's good for the family Thanks for posting!
