Mexican Red Rice

This is yummy! To me this tastes better than the rice you get as a side dish at so many mex restaurants. From Texascooking.com

SERVES 6 (change servings and units)

Ingredients

    Heat the oil in a heavy skillet. Add the rice and stir over medium-high heat until rice is golden brown.
  2. 2
    Add the garlic and chopped onion, and sauté until the onion just begins to brown.
  3. 3
    Add the tomatoes, tomato sauce, chicken broth, chili powder and salt, lower heat and cover.
  4. 4
    Simmer for 20 to 25 minutes until all liquid is absorbed. Remove from heat and allow to sit, covered, for 5 minutes. Fluff with a fork and serve.

I have tried making this twice now and each time the rice did not get done. I followed the directions to a t so what to do now?

    I have been trying Mexican rice recipes for years. I had given up and thought that I would always have to buy the junk in a box. This is excellent!!! It was almost as quick as opening a box and way better tasting. I did use a can of diced tomatoes in place of the plum tomatoes. YUMM

    Made this rice tonight and it was DELICIOUS. I've gone through many Mexican rice recipes and this is by far the best and the most satisfying I've come across. It's exactly the flavor I was looking for all this time. Thank you so much for sharing.
