If you like Mexican food and fish- this dish is for you! One of my favorite meals. From Harpoon Henry's Restaurant in San Diego. This comes together in a flash with simple ingredients.

SERVES 6 (change servings and units)

    Preheat oven to 350.
  2. 2
    Coat fillets with flour seasoned with salt and pepper to taste.
  3. 3
    Heat butter in skillet and lightly sautee fillets in butter til done and flaky.
  4. 4
    Transfer fillets into individual casserole dishes or small oven proof bowls.
  5. 5
    Divide sauce and chilis among them evenly and then sprinkle cheese over each evenly.

    Bake for 15 minutes till cheese is nice and melted.

    Sprinkle with cilantro leaves.

    Note:Sometimes I put a layer of mexican rice (try recipe #117892) or orzo flavored with some cumin in the bottom of the bowl before assembling. A one dish meal and you have only one barely dirty skillet to clean!

    Note:Sometimes I make this just for myself. Fry fish-pour a little sauce-add a TBS of chilis- sprinkle some cheese. It's not brain surgery or rocket science. Save what's left in the cans for another use like adding to scrambled eggs. I hope you enjoy this dish as much as I have for many years.

I have been completely converted, this fish was delicious! I'm not really a big fish lover, but love this I did. In the past, the only way I would eat fish is by battering and deep frying it. We had some fresh Atlantic Haddock filets brought in for my fish loving husband and father, so I wanted to try something different that maybe would appeal to me. I can honestly say that this is the first time I have ever said "I love this fish" and really meant it! We made it exactly as written, with the exception of having to use plain cheddar cheese as I had no jack. Flaky fish without a fishy taste, the flavours of the chili sauce and cilantro make this a gorgeous dish, I served it with your recipe for Mexican rice, another winner in my household. I've always known I should have more fish in my diet, and now I will. The next day for lunch we made fish tacos with the extra filet that was leftover, yummo. Thanks my dear friend, I'd give this 10 stars if I could!

    This is the best fish I've ever had. No exaggeration. I used Halibut and the entire family cleaned the fish off of their plates. Thanks for posting a great, quick dinner!! Made for ZWT5.

    I'm a convert! Although I love cheese, I've never cared for it with any fish dish. (Fish isn't my favorite thing, anyway). WOW - this was great! Red Snapper was juuust the right choice. I used Victoria brand green tomatillo salsa (not some other green salsas or enchilada sauces, which can just be green chili or jalapeno-based. Used Kraft "Mexican Cheese Blend" pre-grated cheese (had on hand). WHAT a score, and "DEAD EASY!" YUM YUM YUM - THANKS!

    You can't NOT love this fish! Cheese and fish is not something I would ordinarily put together, except for maybe a subtle flavored cheese like parmesan so this turned out to be a real treat for me. I was going to rinse the fish before coating just to make sure the flour stayed on good and inspiration struck! I marinated for about 15 min in Tecate beer then dipped in whole wheat flour, because obviously I'm a health nut. My fish came out perfectly and the combination of flavors were fabulous. I suggest letting the cheese get slightly burnt around the edges as that was my favorite part. Thanks for sharing! Made for ZWT3.
