Mexican Cream Cheese Rollups

Light, tasty, creative appetizer, and can become almost fat-free with the substitutions I recommend. Yum! (Cook time==refrigeration time).

SERVES 8 -10 (change servings and units)

Ingredients

    In a medium bowl, mix together cream cheese, mayonnaise, green olives, black olives and green onions.

    Spread cream cheese mixture in a thin layer onto each tortilla.
  3. 3
    Roll up tortillas.
  4. 4
    Chill about 1 hour, or until the filling is firm.
  5. 5
    Slice chilled rollups into 1 inch pieces.
  6. 6
    Serve with salsa for dipping.

These tasted great, but there was a bit too much mayo I think because ours never firmed up in the fridge and wound up running everywhere as we ate them. Very messy! But, good.

    I made this for a Super Bowl party and it was a hit! My son loved them! They are so good, I added a half cup of salsa to the cream cheese like another chef did, and it only added to the great taste. I think you would have to like olives though. But we do. I know I will be making these a lot. Another plus they are easy to do! Thanks for sharing.

    I stirred in the 1/2 cup salsa and it gave it a pretty pink color and a wonderful flavor.

    These are so good. I get asked for the recipe whenever I bring them anywhere, and they are embarrassingly easy to make. I only use 6-7 tortillas, though, since otherwise the filling gets awfully thin. I gave this recipe to one friend who made these with Miracle Whip, and she said it altered the taste so much that it wasn't nearly as good. (I didn't try it myself, but I thought I'd pass the tip along just the same!) I was going to post this one, but since it's already here I will review yours instead!
