Mexican Black Beans

Recipe #101466 | 40 min | 10 min prep | add private note

I looked all over for a recipe for black beans that included my favorite ingredients. When I couldn't find one, I started experimenting. These have become one of our favorite side dishes with Mexican meals. The lime juice adds a real tang to the recipe.

SERVES 4 (change servings and units)

Ingredients

Directions

  1. 1
Saute bacon until crisp, then set aside.
  2. 2
Drain all except 1 T bacon grease.
  3. 3
Saute onion and jalapeno in remaining bacon grease.
  4. 4
Add all remaining ingredients except bacon and simmer until beans are hot and tomatoes have reduced a bit.
  5. 5
    Top with bacon pieces.
  6. 6
If you like more spice you can either leave some seeds in the jalapenos or add a pinch of cayenne pepper.

This was a nice side dish to go with tacos for dinner. An easy way to add favor to a can of back beans.

This was just ok for me, but my family really liked it. They all gave it a thumbs up, although I would have rated it as a 2... so I gave it a four, since there are 4 of them, and one of me. LOL I am not sure what was missing for me, but it just wasnt what I was hoping it would be. I will more than likely make it again, however, because my family will eat it!

Wow, this was really good. My family loves black beans. I have tried several different recipes. I have finally found the right one for us. I didn't have the Cumin on hand, so I left it out. Didn't seem to miss it. I also cut down on the tomatoes. Great recipe, thanks so much for sharing.
