Mediterranean Spiced Rice With Apricots

This recipe comes from the package of apricots I have in my pantry. I love the flavors of the Mediterranean and thought this sounded yummy. If you would like and have some cooked chicken, you can shred the chicken and add to the dish along with the apricots for a light main course.

    In a saucepan, over medium heat, warm the olive oil, add the garlic and cook for 30 seconds.

    Stir in the chicken stock and water; bring to a boil.
  3. 3
    Add the rice; reduce heat, cover and cook for 15 minutes or until rice is almost tender.
  4. 4
    Stir in seasonings, apricots and green onion; cook an additional 5 minutes to blend flavors.

This was good but just missing something, I sauteed the garlic with green onions in 2 tablespoon butter and used all chicken stock, I used long grain converted white rice for this, I might increase all spices slightly next time I make it, thanks Paula!...Kitten

    This rice was a great side dish with porckchops! I loved the flavor of this though I did make a couple of changes. I used 1 Tbsp of chicken soup mix with with 2 cups of water instead of the chicken broth and I don't like cumin so I only used 1/4 tsp and it was just enough. It wasn't overpowering but you could still taste it. Other than that I did everything else as directed! Thanks for the recipe PaulaG!

    A lovely, quick and easy side dish! The spices are great but this definately needed salt for our tastes. Thanks for posting your recipe Paula!

    This is definitely a nice change from plain old white rice! The apricots add a nice texture and flavor, and the spices kick it up a notch. I didn't have any green onions but otherwise I followed the recipe exactly and the timing was right on. I'll definitely be making this again soon.
