Meatloaf Muffins With Stove Top Stuffing

This is very quick and easy to make. Kids love the "muffins". Also great for any of those anti-onion people in your home. You can make it with ground turkey to make it really healthy. I actually have a pan I drilled holes in to let the fat and grease drain out while cooking. We make these often. I got this recipe from a friend who was doing Weight Watchers at the time. Oh, and I half this recipe all the time. If I feel like loafs I just form those and bake a bit longer.

SERVES 6 -8 , 12 muffins (change servings and units)

    Mix all ingredients.

    Spray muffin tins with cooking spray (Pam), esp for turkey.

    Fill muffins tins to top.

    Bake at 350°F for 35 minutes.

We loved this recipe as well. I used 1.3 lb (standard size tray) of 99% fat free turkey breast and about 4oz of stuffing, 1 cup of chicken broth, 1 egg and several shakes of worcestershire sauce (I got this from an awesome turkey meatloaf recipe from Ina Garten and it gives it a more rich flavor) and topped with ketchup. Easy and fast and yummy!

    I can't believe I haven't reviewed these yet! I have been making them for a good long while now. I am NOT a fan of meatloaf, but my SO is, so I found this recipe and it didn't sound like traditional yucky meatloaf to me. So we gave it a whirl. We have a 16 year old, an 11 year old and a 9 year old also, plus SO's mother lives with us. NO ONE had a complaint about dinner, everyone had seconds. All of them are picky eaters. I usually serve it with a bit of gravy but they really don't need it, they come out moist. I have also made these with ground pork and that came out great too. So thanks for the great recipe, it definitely tastes like you spent more than a few minutes on it, which on a busy weeknight is always appreciate.

    My family loved these! I am a bit neurotic with meatloaf because I HATE when I see it floating in oil, so I was nervous that I was going to pull these out and have 12 little meatloaves floating. To my happy surprise they were perfect. I used ground chuck for these and the only addition I would make it add a bit of salt. Other than that, I love that perfect size of these and that they only take 35 minutes to make which is great if your in a hurry! Also, these look so much nicer on a plate instead of a slice. We will definately make these again.

    I used Pepperidge Farm stuffing mix and it turned out really good! The herbs in this were just the right amount of flavor for us. It's so quick to mix up and get into the oven. I made larger muffins in a 6 muffin pan, and baked for 40 mins. Perfeft size for us, and we all loved them!
