Mean Chef's Yucatan-Style Chicken, Lime, and Orzo Soup

I adopted this recipe from Mean Chef, who described it as "quick easy and delicious." I agree--it's simple to make, very yummy, and reasonably filling. It makes a good, light meal.

SERVES 4 (change servings and units)

Ingredients

Directions

    Cook orzo in pot of boiling salted water until just tender.
  2. 2
    Drain well.
  3. 3
    Heat oil in large saucepan over medium heat.
  4. 4
    Add onion, garlic, and chiles.
  5. 5
    Sauté until onion begins to brown, about 4 minutes.
  6. 6
    Add chicken; sauté 1 minute.
  7. 7
    Add broth, lime juice, and tomato.
  8. 8
    Simmer until chicken is cooked through, about 3 minutes.

    Mix in orzo, then chopped cilantro.
  10. 10
    Season soup with salt and pepper.

    Ladle soup into 4 bowls.

    Garnish with cilantro sprigs.

Very interesting and easy to make. We enjoyed trying something new. It seems to be missing some depth, we could not really identify what would make it a total 5 star. Loved the cilantro and lime flavor, very refreshing! Thank you for posting and opening our eyes to a new thing. Great soup to enjoy on a hot summr evening.

    I finally had all the ingred. on hand to make this. Mine had some serious bite to it since I never see the need to de-seed jalapenos I chopped everything instead of slicing and added more orzo to thicken it a bit. I agree with another review that it is missing something but I'm not sure what. I had this for lunch and it was a great light meal. Thank you!

    What a very refreshing soup! I was a bit disappointed because I was expecting spiciness but I guess my peppers just didn't pack a punch which was a bummer :o( Other than that, I really enjoyed this soup so much so that I am eating it for breakfast as I type. In this house, that is the ultimate compliment!

    I started making as written, but after a taste test, the other reviewers were correct that it was lacking flavor. I added about 1 1/2 t. ground cumin and a dash of chili powder. I also added some corn. With these additions I would give it 4 stars. I took the advice of another reviewer and added the uncooked orzo directly to the soup. This recipe was originally published in Bon Appetit, March 2004.
