    Melt the butter in a medium-size saucepan over medium heat.

    Add the mushrooms and sauté until brown, about 7 minutes.

    Cook this roux for 2 minutes, stirring constantly.

    It will stick to the bottom of the pan a little bit; that's okay.

    Stir in the stock, wine, soy sauce, and pepper, and bring to a boil.

    Cook the sauce at a lively simmer for 5 minutes, stirring almost constantly and scraping any crusty bits that adhere to the bottom of the pan.

    Mmm! Love those mushrooms! I added a dash of garlic powder to this, and served it with baked chicken. I used homemade chicken stock, and should have added some salt. The combination of flavors is really tasty. Made for Jeff's Cook-A-Thon. Thanks for posting this, Jeff, and get well soon!

    Excellent flavor! I served it over fried cube steak and everyone loved it. I used homemade beef stock since I didn't have vegetable. I had to add some more flour to thicken it up some but it was one of the best gravies I've ever had. Thanks!

    Just superb!!! Saved my dinner. My mom made roast chicken and potatos (never did like roast chicken much), made this gravy and the dinner turned out fabulous. Even my brother who doesn't eat mushrooms liked the gravy. Thank you.
