Mashed Potatoes With Roasted Garlic and Herbs

Potatoes are comfort food But when you add Lavender to it and you have real comfort food! Lavender and rosemary are a match made in heaven. Use together or alone. Your choice. You can throw fresh garlic into the potatoes when boiling in place of roasting them for ease. Almost as good as roasted garlic. To bring it over the top try it topped with Luscious Creamy Glazed Onions.

SERVES 6 (change servings and units)

    Cover and cook potatoes in boiling salted water for 15 to 20 minutes, until potatoes are fork tender.

    Drain potatoes.
  3. 3
    Mash potatoes in a large mixing bowl until no lumps remain.
  4. 4
    Add butter and cream, salt, and pepper mashing in to blend together.
  5. 5
    Mix in herbs and garlic.
  6. 6
    Garnish with herbs.

    A delightful recipe: so creamy and so superbly flavoursome! I have a thriving lavender bush growing just outside my front door and now I'll be doing more than just enjoying its aroma! I made this - using a tablespoon of Rita's fabulous Roasted Garlic Spread Roasted Garlic Spread - for ONE-TWO-THREE-HIT WONDERS 2006. I used unsalted butter, 1/2 cup of cream and 1/4 cup of Greek yoghurt - and, of course, the lavender flowers as specified in the recipe. Thanks Rita! We all enjoyed this so much that I know that I'll be making it again and again. If you have leftovers - but be warned: there may well be NO leftovers! - the potatoes reheat well in the microwave.

    Mizz Rita L, you did it again! Another Academy Award winning recipe! Used roasted garlic which I would recommend over fresh, and white pepper instead of black. What a luscious recipe-even after three helpings! (I'm stuck to the dining chair for the next 10 hours!) Served this with our own smoked turkey breast and California Wilted Spinach Salad. PS used the lavender only, not the rosemary.

    These are awesome potatoes, DH loved them. I used 4 baking potatoes and the rosemary with just a little extra butter. So very good along side Chef Kate's Boeuf Bourguignon a La Julia Child Boeuf Bourguignon a La Julia Child! Will be making these mashed potatoes soon!
