Mashed Potatoes Swirled With Pesto

Here's a twist on the common mashed potato recipe.The pesto is gently folded in to streak the potatoes.This would be fun for St. Patty's Day!

SERVES 6 -8 (change servings and units)

Ingredients

Directions

    Cover and cook potatoes in boiling salted water for 15 to 20 minutes, until potatoes are fork tender.

    Drain potatoes.
  3. 3
    Mash potatoes in a large mixing bowl until no lumps remain.
  4. 4
    Add butter and milk, salt, and pepper mashing in to blend together.
  5. 5
    Fold in pesto very lightly just to streak the potatoes.
  6. 6
    Garnish with pine nut and basil.

    Very different for us, but we enjoyed it a lot. I'm not a huge fan of pesto, but I really enjoyed it in mashed potatoes. I added some fresh oregano and a little garlic as well. Delish! Made for ZWT4 for the Tastebud Tickling Travellers.

    What a deliciously different way to enjoy mashed potatoes! DH and I really enjoyed these the other night as a side to our lamb chops. Loved the addition of basil and pine nuts in the garnish. We will definitely be making this again (when I'm not devouring your garlic cauliflower). Thanks, Rita. Made for ZWT4.

    Halfway through making this recipe I discovered that I was out of pesto, so I got creative and made my own out of the only thing in the house that would work...bok choy. It was very tasty, and probably a lot healthier than my typical mashed potatoes swimming in melted butter. I can't wait to try it with real pesto!
