This is one my daughter Heather came up with, though when she does it she adds more butter and cheese than what I've stated. When I say spring onion I'm referring to the one without the onion on the end (I think the American's call it scallions and is also known as green onions). You could try different cheeses.

SERVES 6 (change servings and units)

    Peel and cut potatoes into large chunks, put in a pot and cover with cold water, cook over a medium heat till tender and still holding there shape.
  2. 2
    While cooking grate the cheeses, finely slice the spring onion and cut the ham up into small pieces. Warm the milk.
  3. 3
    Drain potatoes and return to the stove for a minute or two to dry out the water.
  4. 4
    Mash potato add the butter and warm milk, should have a smooth thick mixture, add the cheeses, spring onion, ham and salt and pepper to taste mixing well through the potato.

These are excellent potatoes. They are like eating a twice baked. I did sautee the onions a little before adding to the potatoes and used bacon instead of the ham because that is what I had. Thanks so much for sharing. Made for Holiday Tag

    Mashed potatoes at their best. Wonderful recipe. Creamy and delcious and went so well as a side dish. The family loved the poatoes made this way. Thanks Pat, for another fantastic recipe.

    These are easy and very good! It's like having a whole meal in one..but this time with the meat incorporated. :D I used cooked & smoked salami for this. I also like seeing the melted cheese mix with the hot mashed potatoes. Garnished this with the salami and cheese. Thank you, I'll be making this again!
