Maple Glazed Beets

I'm the only one in my family that adores beets, so when I do make them it's got to be very special, like these luscious beety babes!

SERVES 10 (change servings and units)

Ingredients

Directions

    Heat the oven to 400 degrees F.
  2. 2
    Place the beets in a roasting pan.
  3. 3
    Dot with 1 tablespoon of margarine, and roast the beets, covered, for about 30 minutes.

    Melt the other 2 tablespoons of margarine in the microwave.
  5. 5
    Stir in the maple syrup and 1 tablespoon of the lemon juice.
  6. 6
    Pour this mixture over the beets.
  7. 7
    Bake, covered, for another 30 minutes, or until the beets are tender and the sauce is thick.
  8. 8
    Sprinkle with the lemon zest and serve.

    I'm making this for my mom and dad on Thanksgiving and think it's going to turn out great. I am a HUGE fan of beets, and a huge fan of Maple, so I'm sure putting the two together will be a hit!

    This is a nice change from Harvard beets etc. We have beets quite of ten and this will join in the ranks of our favorite. It is so easy and the lemon gives some zip in combination with the Maple syrup Thanks Mirj -

    Very good recipe that a 3 year old is happy to eat. Very easy. The sauce didn't thicken up after the time allotted but still very edible.
