Mango Salad

It really is very beautiful to look at, not to mention eat! Perfect with Indonesian and Thai dishes.

SERVES 4 (change servings and units)

    I find the easiest way to cut up mango for this is to cut off as much as you can, slicing along the side of the pit.

    You can tell what way the pit grows by its shape.
  3. 3
    Score the mango halves lengthways, then crossways, into 3/4 inch cubes, going through to the skin, but not through it.
  4. 4
    Turn the mango halves inside out and slice off the cubes.
  5. 5
    Toss with remaining ingredients.

    Goes well with any Thai or Indonesian dish.

    Like Indonesian Ginger Chicken!

I prepared this salad to accompany Sriracha Chicken Wings (see my page) and they paired wonderfully! My only alteration was julienning the mango and veggies (I like to eat small bites). Fan-tiggity-tastic!

    I used the smaller (sweeter) apple mangoes and it worked wonderfully! What an easy and delicious recipe. The guys and gals at the hall loved it.

    This is a lovely salad. I made it as you directed, except I added a jalapeņo, finely diced instead of the green bell pepper. The cilantro adds a nice piquant flavor to the ripe mangos. Actually, I served this as a side for spicy enchiladas. The cool flavors of this salad are perfect for for spicy dishes. Thanks so much for sharing this recipe. Definately a keeper. I love the photograph someone posted above!

    Excellent combination. I used tomatoes instead of red pepper due to personal preference and it worked out well. I also added a bit of sugar as my mangos weren't perfectly ripe. Thanks.
