A lovely, moist loaf with a winning combination of flavours. However, based on the amount of flour used, next time I would bake it as one big loaf rather than two smaller ones.

WOW!!! This was my last thing to make during the ZWT3 Game - and WHAT a fabulous end to a terrific FOODIE TOUR. My team mate ~Rita~ has come up with another incredibly delicious and different winner with this recipe!! This is my favorite of all of my "Family Picks" during this last leg of the Tour. The blends of spices are AMAZING...a wonderful fragrant and tasty array of sweet heat. The mango and macadamia nut are fabulous flavor playmates. I made one small change and used applesauce in place of the oil and my bread was still super moist from all the natural juice...I LOVED this special taste of the Caribbean on a sweltering July day in NJ!!! (...I got up and got it into the oven early to beat the heat and to be able to enjoy it with a light salad dinner) - I only have one real loaf pan, but recently received a set of mini-pans as a gift so, I christened 2 of these in with this fabulous recipe!! I got one regular and 2 minis from the batter; all 3 were perfectly golden, fat and lovely!! The mini loafs will go out tomorrow as gifts that I will be proud to credit as inspired by the wonderful recipe creations of ~Rita~ - discovered while playing in the exciting Tour Game!!...OH!!!...DO not forget a "fat pinch" of the cayenne it is remarkable with the other stunning spices!!! Thanks so much for another great recipe from one of my favorite ZAAR sisters!!! **Way to think "out of the pan"!!**

The crust on this was a like a crisp sugar crust, very yummy. I think i did leave the mango chunks a little too big, my fault, will chop them up really small next time. Still yummy.

Made for ZaarTag. This was wonderful! Smelled so good in the oven and tastes great too! This would also work well as one of those "gifts in a jar" where you put all the mix in a jar with an attached recipe card on how to prepare it. I think it would be good with other kinds of fruits also, or even without the fruit. Great recipe RitaL!
